The Philippines’ Spanish, Chinese and Filipino roots all have influenced its cuisine – and 50 years of American influence have left the locals with a love of burgers that gives you a better choice than anywhere else outside the US! One of my favorite places to eat in Manila and to still my occasional cravings for a burger is 8cut – they allow you to customize your burger to your taste from the bun to the patties and the sauce, you can order the best waffle fries in Manila and even get a milkshake with them – what’s not to love?
8cut is a mini-chain of custom burger restaurants with outlets in Greenbelt Makati, Bonifacio Global City and at the Mega Mall in Ortigas, covering the three major business districts of the capital. I had my first 8cut burger at the Makati outlet and have since been to the other two locations as well – and the burgers and fries are just as good across all of them, so you can go to any of them in confidence.
Each of the outlets is a casual dining restaurant. They have simple, modern wooden tables and metal or wood chairs and offer indoor and outdoor seating. Staff will bring you a menu and take you through all the choices you have to customize the perfect burger to your own taste: You can choose from a selection of buns, different kind of meats to go into your (one or more) patties as well as the secret sauce they have developed. The sides include some of the best fries in Manila, crispy fried waffle-shaped fries – hmmm. Add to that soft drinks, beer or a classic milk shake and you have a complete meal.
Service was friendly and quick on each occasion, food was delivered to the table as the kitchen finished it and the staff was attentive to address any additional wishes throughout the meal.
Whenever I order a burger at restaurant prices, I expect restaurant quality above what a fast-food chain will throw at you – and 8cut delivers: You can choose from a brioche (my favorite), sesame or kaiser bun and each of them is much better than a regular bun, very fresh! The toppings are equally fresh and you can choose from a variety of sauces. The house secret-sauce No 3 & 4 are worth a try! You can also choose from different meat blends, starting with the most popular house blend to a steak cut or ox blend, with tastes varying from meaty to juicy or a little more gamy. If you are really a meat-fan, you can double up on the meat patties! Top that off with a choice of cheese, including rather fancy Gruyere, Feta or Mozzarella and you got yourself a top-notch burger! If that sounds like too much work, they have a list of ready-to-order burgers as well that combines the meat, sauce, cheese and toppings to best effect. And did I mention the amazing waffle fries?
Just writing this review made my mouth water and made me realize that I haven’t been in a while – time to go back! One of my visiting US friends called them “better than in the US” – and that’s well deserved praise! If you crave good burgers, give one of the 8cut outlets a try, it’s worth a visit.
